Oatmeal, Chocolate, Peanut Butter Bacon Cookie

Could life be complete without chocolate? What about bacon? If you had the opportunity to combine both ingredients in one recipe together would you do it?

A few weeks ago I read a cozy mystery and as is typical of the genre the author included a recipe at the back of the book. This particular one, for a batch of cookies, caught my attention. The ingredients included chocolate chips and bacon. I told John about it and one thing lead to another. He altered the recipe to include a few of his own favourite ingredients and this is the result.

Oatmeal, Chocolate, Peanut Butter and Bacon Cookies

In a bowl cream together
-1/2 cup margarine
-1/2 cup peanut butter
-1 cup brown sugar
-1/2 cup white sugar
-2 eggs
-1 teaspoon vanilla

In a second bowl combine
-2 cups oats
-1 1/2 cups flour
-1 teaspoon baking soda

Mix dry ingredients into wet, then add
-1/2 cup chocolate chips
-1/2 pound (1/3 cup) cooked, crumbled bacon

Pre-heat cookie sheet. Grease sheets and bake at 350 degrees F. for 12 minutes.
Makes 4 dozen cookies.
