Cinnamon Oatmeal Cookies



Morning fog greeted us for an hour or so today. Then the clouds parted, and specks of blue sky became visible. I happened to glance over the rim of my coffee mug and thank goodness I did. What a sight! A blanket of frost dusted the trees on the island across the lake, and with the brilliance of the sun's rays it was glorious.

It's hard to believe a week ago today we were battling snow squalls, road closures and white knuckling it along Hwy 17. If the next five weeks pass by as quickly as this one, our time in North Bay with Keegan will be over before we 're ready to leave. Wonder if we could encourage our hosts to delay their return?! ;-)

One requirement for any housesitter is the ability to feel at home wherever you find yourself. While the surroundings may be different, it's important to settle in and make it your own. One way we manage that is by cooking or baking our favourite recipes.

The cinnamon in these Oatmeal Cookies fills any house with a tantalizing aroma that smells of home. Better still, they're delicious!

Cinnamon Oatmeal Cookies

Ingredients:
-3/4 cup white sugar
-1 cup dark brown sugar
-1 egg
-1 tsp vanilla
-1 tsp cinnamon
-1/4 cup melted butter
-1/4 cup vegetable oil or butter
-1 cup all-purpose flour
-3/4 cup quick cooking rolled oats
-1 Tablespoon baking soda
-1/2 cup raisins

Mix flour, oats and soda in a small bowl. 
In second larger bowl mix remaining ingredients. Stir well to combine.
Add dry ingredients to wet. 
Form into uniform balls and place on heated, greased cookie sheet.

Bake at 350F for approximately 11 minutes.
Yields 2-3 dozen cookies depending on size.
